Ingredients
  

For the Cauliflower Base
  • 1 head cauliflower, cut into florets large
  • 2 cloves garlic, finely minced
  • 2 1/2 tbsp extra virgin olive oil
For the Seasoning
  • 1 1/2 tsp chipotle powder adjust to taste
  • 3/4 tsp salt fine sea salt recommended
  • 1/2 tsp black pepper, freshly ground
For Finishing Touches
  • 1 tbsp fresh lime juice about 1 lime
  • 1 tbsp fresh coriander (cilantro), chopped optional, or swap parsley/chives

Method
 

  1. Preheat oven to 200°C (390°F) for even roasting and caramelization.
  2. In a mixing bowl, toss cauliflower florets with olive oil and minced garlic until well coated.
  3. Sprinkle chipotle powder, salt, and black pepper. Toss again for even seasoning.
  4. Spread florets in a single layer on a parchment-lined baking sheet. Roast for 25 minutes, tossing halfway, until golden and tender.
  5. Remove from oven, drizzle with lime juice, and garnish with chopped coriander. Serve hot.

Notes

Swap chipotle with smoked paprika for milder flavor. Add toasted nuts or seeds for crunch. This dish is naturally vegan and gluten-free.
