For the Brussels Sprouts
  • 1 lb Brussels sprouts trimmed and halved
  • 2 tbsp extra-virgin olive oil for even roasting
  • coarse sea salt to taste
  • freshly ground black pepper to taste

  • 1/4 lb prosciutto thinly sliced, cut into small chunks
  • toothpicks or small skewers for assembling bite-sized servings

Method
 

  1. Step 1 – Preheat the Oven: Preheat oven to 400°F (200°C). A hot oven ensures crispy, caramelized Brussels sprouts.
  2. Step 2 – Prepare the Brussels Sprouts: Spread halved sprouts on a rimmed baking sheet. Drizzle with olive oil, season with salt and pepper, and toss well to coat evenly.
  3. Step 3 – Roast Until Tender and Crisp: Roast for 25 minutes, then stir or shake the pan. Continue roasting for another 15 minutes until golden and tender inside.
  4. Step 4 – Cook the Prosciutto: While sprouts roast, heat a skillet over medium-high. Add prosciutto pieces and cook 5 minutes until crisp. Remove from heat and let cool slightly.
  5. Step 5 – Assemble the Skewers: Let sprouts cool for 5 minutes. Thread one sprout half, add prosciutto, then another sprout half. Repeat until all are assembled. Serve warm for best texture.

Serving Tip: Drizzle skewers with balsamic glaze for a gourmet touch and serve with aioli or honey mustard for dipping.
