Melon Prosciutto Skewers

Ingredients
  

Skewers
  • 1 medium cantaloupe ripe and firm
  • 8 oz fresh mozzarella balls ciliegine, drained
  • 12 leaves fresh basil
  • 12 slices turkey prosciutto thinly sliced
Garnish
  • balsamic glaze for drizzling

Method
 

  1. Cut the cantaloupe in half, remove the seeds, and use a melon baller to scoop 24 uniform melon balls. Pat dry with paper towels.
  2. On each skewer, thread one melon ball, a folded basil leaf, one mozzarella ball, a loosely folded slice of turkey prosciutto, and another melon ball.
  3. Arrange the skewers on a serving platter and drizzle lightly with balsamic glaze just before serving.

Notes

Honeydew or watermelon can be used in place of cantaloupe. For a vegetarian option, omit the turkey prosciutto and add marinated feta or grilled vegetables. Assemble shortly before serving for best freshness.
