Ingredients
  

For the Meat & Base
  • ½ lb lean ground beef
  • ½ lb ground Italian sausage
  • to taste salt & black pepper
  • 1 tbsp olive oil
  • 1 onion yellow onion finely chopped
  • 3 cloves garlic minced
For the Sauce
  • 2 tbsp tomato paste
  • 24 oz marinara sauce or homemade equivalent
  • ¼ tsp red pepper flakes adjust to taste
  • 2 tbsp fresh parsley chopped (or 2 tsp dried)
  • ½ tsp dried oregano
  • 1 tsp dried basil
  • 7 cups low-sodium chicken broth or vegetable broth
For the Pasta & Veggies
  • 9 sheets lasagna noodles broken into bite-size pieces
  • 2 cups fresh spinach optional
For the Cheese Topping
  • 10 oz ricotta cheese or cottage cheese
  • 1 cup mozzarella cheese shredded
  • ½ cup Parmesan cheese freshly grated
  • to garnish fresh basil leaves

Method
 

  1. Step 1: In a large pot, cook ground beef and sausage over medium-high until browned. Season with salt and pepper. Drain excess grease and set meat aside.
  2. Step 2: Add olive oil to the pot. Sauté onion for 5 minutes until softened. Add garlic and cook 1–2 minutes more.
  3. Step 3: Stir in tomato paste, then add marinara, herbs, red pepper flakes, and broth. Return meat to pot and stir well.
  4. Step 4: Bring to a boil. Add lasagna noodles and simmer 15–20 minutes until tender, stirring occasionally. Stir in spinach at the end if using.
  5. Step 5: In a bowl, mix ricotta, mozzarella, and Parmesan for the cheese topping.
  6. Step 6: Ladle soup into bowls. Top with a spoonful of cheese mixture and garnish with fresh basil. Serve hot with crusty bread.

Notes

✔ For lighter soup: use ground turkey or chicken. ✔ Vegetarian: use vegetable broth and extra veggies. ✔ To freeze: store without noodles, then add fresh-cooked pasta when reheating. ✔ Prevent mushy noodles by cooking them al dente.
