Ingredients
  

Seasoned Chicken
  • 1/3 cup all-purpose flour
  • 1 tsp fine salt
  • 1/2 tsp cracked black pepper
  • 3/4 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
Burger Build
  • 2 tbsp olive oil divided
  • 2 large onions halved and thinly sliced
  • 14–16 oz chicken breast halved horizontally into thinner cutlets
  • 4–8 slices Swiss or melting cheese Massdam or processed cheese also works
  • 4 brioche burger buns or any soft rolls
  • 1 ripe avocado
  • 1 handful fresh lettuce leaves
  • 2 large ripe tomatoes sliced
Garlic Mayo
  • 1/2 cup mayonnaise whole egg variety preferred
  • 1 large garlic clove finely minced

Method
 

  1. 1. Prepare the Garlic Mayo: In a small bowl, mix mayo and garlic. Stir well, cover, and let sit for 20+ minutes to infuse flavor.
  2. 2. Season the Chicken: Mix flour and spices in a dish. Pound chicken if thick, to about 1 cm for even cooking.
  3. 3. Sauté the Onions: Heat 1 tbsp olive oil over medium-high heat. Add onions and cook 5 minutes until soft and golden. Season lightly.
  4. 4. Toast the Buns: Preheat oven to 320°F (160°C). Split and toast buns until crisp. Leave in oven with door ajar to stay warm.
  5. 5. Cook the Chicken: Heat remaining oil in skillet. Dredge chicken in seasoning, shake off excess. Cook 2½ mins per side, adding cheese after flip. Cover briefly to melt cheese.
  6. 6. Assemble the Burgers: Mash avocado, spread on bottom buns. Add chicken, onions, lettuce, tomato. Spread garlic mayo on top buns and close. Serve hot.

Notes

Use melty cheeses like Swiss or Havarti for best results. Pound chicken slightly larger than buns to account for shrinkage. For low-carb, use lettuce wraps instead of buns. Customize with your favorite sauces or toppings!
