  • 3 sprigs fresh rosemary about 0.1 oz
  • 6 sprigs fresh thyme about 0.1 oz
  • 1 tsp peppercorns optional
For Sweetness (Added at the End)
  • to taste raw honey

Method

  1. Prep the Ingredients: Grate or chop horseradish, ginger, turmeric; slice jalapeños, lemon, and orange; chop onion; crush garlic.
  2. Layer the Jar: Place prepared produce and spices into a clean 1.5–2 quart jar.
  3. Add the Vinegar: Pour apple cider vinegar over ingredients until fully submerged.
  4. Seal and Protect: Use parchment under metal lid or a plastic lid. Seal tightly.
  5. Shake and Store: Shake gently. Store in a cool, dark place 3–4 weeks, shaking daily.
  6. Strain: Strain through fine mesh or cheesecloth, pressing solids to extract liquid.
  7. Sweeten and Taste: Stir in raw honey to taste. Adjust sweetness.
  8. Store: Transfer to airtight container. Refrigerate up to 6 months or keep in cool pantry up to 3 months.

Notes

Adjust heat by using more or fewer peppers. Add extra citrus for brightness. Honey should be added after straining to keep its raw properties intact.
