Homemade Elderberry Syrup

Ingredients
  

For the Elderberry Base
  • 10.5 cups filtered water cold or room temperature
  • 2 cups dried elderberries or 1⅓ cups fresh or frozen
  • 6 tablespoons freshly grated ginger
  • 3 teaspoons ground cinnamon
  • 1.5 teaspoons ground cloves
For Sweetening
  • 3 cups raw honey wait until syrup is lukewarm before adding

Method
 

  1. Pour 10½ cups of water into a large saucepan. Add elderberries, grated ginger, cinnamon, and cloves.
  2. Bring to a rolling boil over medium-high heat. Reduce to a simmer and cook uncovered for 30–40 minutes, or until liquid is reduced by half.
  3. Turn off the heat and let the mixture cool until warm. Gently mash the berries against the side of the pot with the back of a spoon or flat utensil.
  4. Strain the mixture through a fine mesh strainer or cheesecloth into a bowl or jar.
  5. Once the liquid is lukewarm, stir in the raw honey until fully dissolved.
  6. Transfer the syrup into a clean glass mason jar or bottle. Seal tightly and refrigerate. Shake before each use.

Notes

For a vegan version, use organic maple syrup instead of honey—but note it reduces shelf life.
Try adding orange peel or star anise during simmering for enhanced flavor.
Use only ripe and cooked elderberries to avoid toxicity. No cheesecloth? A clean t-shirt or nut milk bag works well.
Add a pinch of cayenne for an extra kick during simmering.
