- Step 1: Heat canola oil in a large skillet over medium-high heat. Add diced potatoes and cook about 6 minutes until golden and partly tender.
- Step 2: Add ground beef, onions, and bell peppers to the skillet. Cook until beef is browned and onions are softened.

- Step 4: Continue cooking 6–8 minutes, until potatoes are fork-tender and beef is fully cooked. Stir in green onions, adjust seasoning, and serve hot.
Notes
Swap Yukon golds for russets if you prefer fluffier potatoes. Use chipotle hot sauce for a smoky twist. For a lighter option, substitute ground turkey or chicken. To make it cheesy, stir in shredded cheese before serving. Double the recipe with two skillets to prevent overcrowding.
