Ingredients

  • 6 tbsp canola oil or substitute olive oil
  • 3 lb Yukon gold potatoes peeled and diced into 1/4-inch cubes
  • 3 lb lean ground beef 93% lean works best
For the Flavor Build
  • 3 small yellow onions finely diced
  • 3 red bell peppers diced
  • 3 tbsp Worcestershire sauce
  • 3 tsp Dijon mustard
For Seasoning
  • 6 tsp smoked paprika
  • 3 tsp garlic powder
  • 3 tsp dried oregano
  • 3 tsp kosher salt
  • 3/4 tsp freshly ground black pepper
  • 3-6 tsp hot sauce adjust to taste
For the Finishing Touch
  • 6 green onions thinly sliced

Method
 

  1. Step 1: Heat canola oil in a large skillet over medium-high heat. Add diced potatoes and cook about 6 minutes until golden and partly tender.
  2. Step 2: Add ground beef, onions, and bell peppers to the skillet. Cook until beef is browned and onions are softened.
  3. Step 3: Stir in Worcestershire sauce, Dijon mustard, paprika, garlic powder, oregano, salt, pepper, and hot sauce. Mix well.
  4. Step 4: Continue cooking 6–8 minutes, until potatoes are fork-tender and beef is fully cooked. Stir in green onions, adjust seasoning, and serve hot.

Notes

Swap Yukon golds for russets if you prefer fluffier potatoes. Use chipotle hot sauce for a smoky twist. For a lighter option, substitute ground turkey or chicken. To make it cheesy, stir in shredded cheese before serving. Double the recipe with two skillets to prevent overcrowding.
