- Spread butter on one side of each slice of bread. Place 4 slices butter-side down and top with mozzarella, feta, roasted peppers, olives, and dill. Cover with the remaining bread slices, butter-side facing outward.
- Warm a non-stick skillet or griddle over medium heat. Cook each sandwich until golden and the cheese melts, about 2–3 minutes per side. Adjust heat if the bread browns too quickly.
- Repeat with remaining sandwiches. For extra gooey texture, press gently with a spatula while grilling. Serve warm.
Notes
Pat roasted peppers dry to avoid sogginess. Try adding spinach, sun-dried tomatoes, or using low-moisture mozzarella for the best melt. A cast-iron skillet will give a crisp, even crust.
