Ingredients
  

For the Sandwich Base
  • softened butter for spreading on the bread
  • 8 slices sourdough bread or another sturdy rustic loaf
Cheese & Filling
  • 3 cups shredded mozzarella cheese
  • 1 cup crumbly feta cheese
  • 16 oz roasted red bell peppers, well-drained & chopped
  • 0.5 cup pitted kalamata olives, halved
  • 2 Tbsp fresh dill leaves, torn or chopped

Method
 

  1. Spread butter on one side of each slice of bread. Place 4 slices butter-side down and top with mozzarella, feta, roasted peppers, olives, and dill. Cover with the remaining bread slices, butter-side facing outward.
  2. Warm a non-stick skillet or griddle over medium heat. Cook each sandwich until golden and the cheese melts, about 2–3 minutes per side. Adjust heat if the bread browns too quickly.
  3. Repeat with remaining sandwiches. For extra gooey texture, press gently with a spatula while grilling. Serve warm.

Notes

Pat roasted peppers dry to avoid sogginess. Try adding spinach, sun-dried tomatoes, or using low-moisture mozzarella for the best melt. A cast-iron skillet will give a crisp, even crust.
