Method
- Start by dicing your tomatoes and place them in a large mixing bowl. Finely chop the onion, bell pepper, and jalapeños. Transfer them all into the same bowl.
- Chop the peaches into slightly larger chunks than the other ingredients. Keep the skin on for color and texture.
- Add in the chopped cilantro, freshly squeezed lime juice, salt, and pepper. Taste and adjust seasoning as needed.
- Use a large spoon or spatula to gently fold everything together until well mixed, being careful not to over-mix.
- Serve immediately or chill for 15–30 minutes to let the flavors meld.
Notes
For a spicier salsa, keep the jalapeño seeds or add serrano pepper. For a milder version, use green chilies instead. Experiment by adding mango or pineapple for a tropical twist. This salsa does not freeze well—enjoy it fresh within 3 days.
