Ingredients
  

Fresh Produce Base
  • 1 lb tomatoes, diced choose ripe but firm tomatoes
  • 1 medium red onion, finely chopped
  • 1 bell pepper, seeded and finely diced about 4 oz, use red or yellow
  • 2 jalapeños, seeded and finely diced adjust quantity for heat level
  • 1.5 lb fresh peaches, diced leave skins on for color and texture
  • 0.5 bunch fresh cilantro, chopped
For the Flavor Boost
  • 2 tablespoons lime juice freshly squeezed
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon freshly ground black pepper or to taste

Method
 

  1. Start by dicing your tomatoes and place them in a large mixing bowl. Finely chop the onion, bell pepper, and jalapeños. Transfer them all into the same bowl.
  2. Chop the peaches into slightly larger chunks than the other ingredients. Keep the skin on for color and texture.
  3. Add in the chopped cilantro, freshly squeezed lime juice, salt, and pepper. Taste and adjust seasoning as needed.
  4. Use a large spoon or spatula to gently fold everything together until well mixed, being careful not to over-mix.
  5. Serve immediately or chill for 15–30 minutes to let the flavors meld.

Notes

For a spicier salsa, keep the jalapeño seeds or add serrano pepper. For a milder version, use green chilies instead. Experiment by adding mango or pineapple for a tropical twist. This salsa does not freeze well—enjoy it fresh within 3 days.
