Ingredients
  

Fish
  • 2 fillets firm white fish about 5 oz each, skin off
  • 2 tablespoons Dijon mustard or mayonnaise as substitute
  • olive oil spray for crisping
  • salt and black pepper to taste
Crumb Topping
  • ½ cup panko breadcrumbs
  • 1 tablespoon fresh parsley finely chopped
  • cup parmesan cheese finely grated
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 pinch salt

Method
 

  1. Preheat the oven broiler to high, or preheat the oven to 390°F (200°C).
  2. In a bowl, mix panko breadcrumbs, parmesan cheese, minced garlic, parsley, olive oil, and a pinch of salt until combined.
  3. Pat fish fillets dry and season lightly with salt and black pepper on both sides.
  4. Spread Dijon mustard evenly over the top of each fillet.
  5. Press the mustard-coated side of each fillet into the crumb mixture until well coated. Lightly spray with olive oil.
  6. Place fish on a lined baking tray and bake for 10–12 minutes, then broil for 2–3 minutes until golden and crispy.
  7. Serve immediately while hot and crispy.

Notes

This recipe works well with cod, haddock, tilapia, snapper, or salmon. For a gluten-free version, use gluten-free panko or almond meal. Not freezer-friendly, as the crumb topping loses its crisp texture.
