Method
- Preheat the oven broiler to high, or preheat the oven to 390°F (200°C).
- In a bowl, mix panko breadcrumbs, parmesan cheese, minced garlic, parsley, olive oil, and a pinch of salt until combined.
- Pat fish fillets dry and season lightly with salt and black pepper on both sides.
- Spread Dijon mustard evenly over the top of each fillet.
- Press the mustard-coated side of each fillet into the crumb mixture until well coated. Lightly spray with olive oil.
- Place fish on a lined baking tray and bake for 10–12 minutes, then broil for 2–3 minutes until golden and crispy.
- Serve immediately while hot and crispy.
Notes
This recipe works well with cod, haddock, tilapia, snapper, or salmon. For a gluten-free version, use gluten-free panko or almond meal. Not freezer-friendly, as the crumb topping loses its crisp texture.
