Method
 

  1. Pour the ½ cup of chicken broth directly into the bottom of your slow cooker to create a steamy, moist environment.
  2. In a small bowl, combine 1 tsp salt, ½ tsp onion powder, ½ tsp thyme, ½ tsp paprika, ¼ tsp pepper, and ¼ tsp garlic powder. Stir until evenly mixed.
  3. Pat the chicken breasts dry with a paper towel. Drizzle with olive oil, then rub the spice mixture over each breast, coating both sides evenly.
  4. Place the chicken breasts in a single layer inside the slow cooker. Avoid stacking for even cooking. Cover and cook on high for 3–4 hours or low for 4–6 hours, until the internal temperature reaches 165°F (74°C).

Notes

Use even-sized chicken breasts for uniform cooking. Don't skip the oil—it helps with moisture and flavor. For extra flavor, add fresh rosemary or thyme to the crockpot. Want it spicy? Add red pepper flakes or cayenne to the seasoning.
