Ingredients
  

For the Batter
  • 0.25 cup plain (all-purpose) flour or use gluten-free if preferred
  • 0.25 cup cornflour / cornstarch adds crispness (or replace with more flour)
  • 0.5 tsp baking powder for a light, airy texture
  • 0.5 tsp garlic powder adds savory depth
  • 0.5 tsp kosher salt or ¼ tsp table salt
  • 0.25 tsp black pepper freshly ground
  • 1 large egg room temperature (about 55g)
  • 2 tbsp milk any type – or use water if preferred
Add-Ins
  • 2 cups frozen peas still frozen but broken into small clumps
  • 1 cup shredded cheese cheddar, colby, or any good melting cheese
  • 0.75 cup finely sliced green onions optional, adds color and flavor
For Cooking
  • 0.25 cup olive oil for pan-frying
Lemon Yogurt Dipping Sauce
  • 0.5 cup plain yogurt
  • 2 tsp fresh lemon juice
  • 2 tsp extra virgin olive oil
  • 0.125 tsp finely grated garlic optional
  • salt and pepper to taste

Method
 

  1. Step 1 – Prepare the Dipping Sauce: In a small bowl, combine yogurt, lemon juice, olive oil, garlic (if using), and a pinch of salt and pepper. Mix well and set aside to let the flavors meld.
  2. Step 2 – Make the Batter: In a large bowl, whisk together flour, cornflour, baking powder, garlic powder, salt, and pepper. Add egg and milk, stirring until smooth and lump-free.
  3. Step 3 – Add the Peas and Cheese: Fold in frozen peas, shredded cheese, and green onions. The batter should lightly coat the peas — this ensures crisp fritters instead of dense ones.
  4. Step 4 – Shape the Fritters: Heat olive oil in a skillet over medium-high heat. Scoop about 3 tablespoons of mixture per fritter and flatten gently into ½-inch discs.
  5. Step 5 – Cook Until Golden: Fry each fritter for about 1½ minutes per side until golden and crisp. Drain on paper towels to remove excess oil.
  6. Step 6 – Serve: Serve hot with the lemon yogurt dipping sauce. Garnish with extra green onions or lemon zest for freshness.

Notes

For a gluten-free version, use a gluten-free flour blend. Add herbs like mint, dill, or parsley for extra flavor. To bake instead of fry, place on a parchment-lined tray and bake at 200°C (400°F) for 12–15 minutes, flipping halfway. Reheat leftovers in a skillet or air fryer to restore crispness.
