Ingredients

For the Waffle Batter
  • 2.25 cups plain / all-purpose flour
  • 2.5 tbsp caster or superfine sugar granulated sugar also works
  • 1 pinch kosher or cooking salt
  • 4 tsp baking powder ensure it’s fresh for best rise
  • 1.33 cups full-fat milk, gently warmed lukewarm, not hot
  • 0.5 tsp vanilla extract
  • 4 large eggs, at room temperature helps with better mixing and rise
  • 150 g unsalted butter, melted and slightly cooled should not be hot
Topping Options (Choose Your Favorites!)
  • Softened butter for classic flavor
  • Maple syrup or honey
  • Powdered or icing sugar for dusting
  • Fresh berries or sliced fruit
  • Whipped cream, chocolate drizzle, jams, or compotes
  • Ice cream or flavored sauces for dessert-style waffles

Method

  1. Step 1 – Whisk the Dry Ingredients: In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk well to evenly distribute the leavening agent.
  2. Step 2 – Combine the Wet Ingredients: In a separate bowl, whisk together milk, eggs, and vanilla until smooth. Ensure the milk is warm, not hot.
  3. Step 3 – Bring the Batter Together: Pour wet mixture into dry ingredients. Gently whisk until almost combined, then add melted butter and mix until smooth. Batter should be thick yet pourable.
  4. Step 4 – Optional Resting Time (Recommended): Cover and refrigerate batter for 2 hours or overnight. Resting enhances flavor and yields fluffier waffles.
  5. Step 5 – Preheat the Waffle Maker: Preheat your waffle iron fully. No need for extra oil if it’s non-stick.
  6. Step 6 – Cook the Waffles: Ladle batter onto the waffle iron, spreading evenly. Close lid and cook 3–6 minutes until golden and crisp. Steam reduction signals doneness.
  7. Step 7 – Serve Hot: Serve immediately, or keep warm on a wire rack in a low oven (70°C/150°F) to maintain crispness.

Notes

Check baking powder freshness: Old leavening means flat waffles.
Don’t overmix: Overworking the batter makes waffles dense.
Rest if possible: Chilled batter produces lighter texture.
For extra crispiness: Cook slightly longer after the light turns off.
Make it savory: Skip sugar and vanilla; add cheese, herbs, or spices.
