Ingredients
  

For the Corn
  • 4 cobs fresh corn husks removed
For the Seasoning
  • 3 tbsp extra virgin olive oil
  • 1.5 tsp garlic powder
  • 2.5 tsp smoked paprika plus extra for garnish
  • 2 tsp kosher or sea salt
  • 2 tsp freshly ground black pepper
For the Garlic Butter
  • 3 tbsp unsalted butter softened
  • 1 clove garlic finely minced
Optional Garnish
  • 2 tbsp fresh parsley or cilantro roughly chopped

Method
 

  1. Step 1: Place corn on a sturdy cutting board. Trim ends, stand upright, and cut lengthwise into quarters to form 'ribs'.
  2. Step 2: Mix garlic powder, smoked paprika, salt, and pepper in a small bowl.
  3. Step 3: Toss corn ribs in olive oil, then sprinkle seasoning mix until evenly coated.
  4. Step 4: Melt butter in a saucepan, stir in minced garlic, and cook 20 seconds until fragrant. Remove from heat.
  5. Step 5: Grill method: Grill kernel-side down 7–8 minutes until charred and curled, flipping to finish. Oven method: Bake at 200°C/375°F (180°C fan) for 25–30 minutes until golden.
  6. Step 6: Toss cooked ribs in garlic butter, garnish with parsley or cilantro, and serve immediately.

Notes

For extra char, finish ribs under a broiler for 1–2 minutes. Spice it up with chili powder or cayenne. Use vegan butter for dairy-free. Best served fresh—avoid freezing as corn loses texture.
