Method
- Toast the hamburger buns until lightly golden. Spread desired condiments on the buns and set aside.
- Divide the ground beef into four equal portions and gently roll into loose balls. Season generously with salt and black pepper.
- Heat a large stainless-steel or cast iron skillet over high heat until very hot, about 2 minutes.
- Place two beef balls into the pan. Top each with parchment paper and press firmly with a metal spatula to flatten into thin patties.
- Cook undisturbed for about 1 minute until deeply browned and crispy around the edges.
- Carefully scrape under each patty and flip. Immediately add a slice of cheese to each burger.
- Cook for another 15–20 seconds until the cheese melts and the burgers are just cooked through.
- Transfer patties to prepared buns, add desired toppings, and serve immediately.
Notes
For the crispiest burgers, ensure the pan is extremely hot before smashing and avoid moving the patties while cooking. Smash only once to keep the burgers juicy.
