  • 16 oz refried beans
  • 2 ½ cups sour cream
  • 2 tbsp taco seasoning store-bought or homemade
  • ½ lime lime juice
  • 2 ½ cups guacamole
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • 16 oz chunky tomato salsa
Fresh Toppings
  • 2 cups shredded lettuce
  • ½ cup grape tomatoes quartered
  • ¼ cup sliced black olives
For Serving
  • corn chips (tortilla chips) for serving

Method
 

  1. In a medium bowl, mix the sour cream, taco seasoning, and lime juice until smooth and evenly combined. Taste and adjust seasoning if needed.
  2. Spread the refried beans evenly across the bottom of a shallow serving dish, smoothing with the back of a spoon.
  3. Spoon the seasoned sour cream over the beans and gently spread into an even layer.
  4. Carefully spread the guacamole over the sour cream layer, keeping the layers distinct.
  5. Sprinkle the Monterey Jack and cheddar cheeses evenly over the guacamole.
  6. Spoon the chunky salsa evenly over the cheese layer.
  7. Top with shredded lettuce, then scatter the grape tomatoes and black olives over the top.
  8. Serve immediately with sturdy corn chips for scooping.

Notes

Layer order matters to prevent sogginess—keep heavier layers toward the bottom and fresh toppings on top. For make-ahead prep, assemble the base layers a few hours in advance and add fresh toppings just before serving.
