Method
- Position an oven rack close to the broiler and preheat the broiler on high.
- Arrange the lightly toasted bread slices in a single layer on a sturdy sheet pan.
- In a bowl, mix the mozzarella and sharp Cheddar. Sprinkle the cheese evenly over each slice of bread.
- Scatter the grated garlic and chopped green chiles evenly over the cheese.
- Season lightly with a small pinch of salt over each slice.
- Broil for 1–2 minutes, watching closely, until the cheese is melted, bubbling, and lightly golden.
- Remove from the oven, let rest briefly, and serve immediately while hot.

Cheese Tip: Freshly grated cheese melts more smoothly than pre-shredded varieties.
