Ingredients
  

Toast Base
  • 4 slices bread brioche, sourdough, or white; lightly toasted
Cheese Topping
  • 1 ½ cups mozzarella cheese grated
  • 1 ½ cups sharp Cheddar cheese grated
Flavor & Heat
  • 2 teaspoons garlic freshly grated
  • 4–6 pieces Thai green chiles finely chopped, seeded if desired
Seasoning
  • salt to taste

Method
 

  1. Position an oven rack close to the broiler and preheat the broiler on high.
  2. Arrange the lightly toasted bread slices in a single layer on a sturdy sheet pan.
  3. In a bowl, mix the mozzarella and sharp Cheddar. Sprinkle the cheese evenly over each slice of bread.
  4. Scatter the grated garlic and chopped green chiles evenly over the cheese.
  5. Season lightly with a small pinch of salt over each slice.
  6. Broil for 1–2 minutes, watching closely, until the cheese is melted, bubbling, and lightly golden.
  7. Remove from the oven, let rest briefly, and serve immediately while hot.

Notes

Cheese Tip: Freshly grated cheese melts more smoothly than pre-shredded varieties.
Heat Control: Adjust the number of chiles and remove seeds for a milder version.
Variations: Add roasted jalapeños, sliced tomatoes, caramelized onions, or a pinch of red pepper flakes.
