Ingredients
  

For the Chicken Patties
  • 500 g ground chicken Can substitute with turkey
  • 1 clove garlic finely minced
  • 1 large egg
  • 0.75 cup panko breadcrumbs
  • 2 cups broccoli cooked and finely chopped
  • 0.75 cup shallots chopped
  • 1.5 cups mozzarella cheese shredded, or up to 2 cups
  • 0.75 tsp salt reduce if using salty cheese
  • 0.25 tsp black pepper freshly ground, to taste
For Cooking
  • 1 spray oil spray for crisping
For the Optional Yogurt Ranch Sauce
  • 0.66 cup plain yogurt Greek or regular
  • 0.125 tsp dried dill
  • 0.125 tsp dried parsley
  • 0.125 tsp dried chives
  • 0.25 tsp onion powder
  • 0.5 clove garlic minced, optional
  • 2 tsp extra virgin olive oil
  • 1 tsp lemon juice optional, to taste

Method
 

  1. Preheat oven to 390°F (200°C). Line a baking tray with parchment paper or spray lightly with oil.
  2. In a large bowl, mix ground chicken, garlic, egg, breadcrumbs, broccoli, shallots, cheese, salt, and pepper until thoroughly combined.
  3. Scoop about ¼ cup of the mixture and form into patties approximately 2.25" wide and ½" thick. Place on prepared tray.
  4. Spray tops of patties with oil. Bake for 15 minutes, flip, re-spray, then bake another 8–10 minutes until golden and crispy.
  5. For sauce: mix yogurt, dill, parsley, chives, onion powder, garlic, olive oil, and lemon juice. Let rest for 20 minutes.
  6. Serve patties hot with ranch sauce, in buns, or over salad. Add lemon or herbs for brightness.

Notes

Use gluten-free panko for a gluten-free version. Add chili flakes or jalapeños for spice. Swap broccoli with spinach or zucchini. Patties freeze well and reheat in oven or air fryer. For air fryer, cook at 375°F for 10 minutes, flip, then another 5–6 minutes.
