Ingredients
  

  • For the Sausage Ball Mixture
  • Ground Beef sausage – A hot or spicy sausage is recommended. The heat is mild so add ½–1 teaspoon red pepper flakes if you want more kick.
  • Cream cheese softened – Room temperature makes mixing far easier and prevents lumps.
  • Bisquick baking mix – Store-bought or homemade works.
  • Shredded cheddar cheese – Use sharp cheddar for the boldest flavor or switch things up with Colby Jack, Monterey Jack, or Pepper Jack for extra spice.

Method
 

  1. Preheat the oven to 350°F (175°C) and line one or two baking sheets with parchment paper.
  2. In a large bowl or stand mixer, combine the ground beef sausage and softened cream cheese until smooth and evenly mixed.
  3. Add the Bisquick baking mix and continue mixing until no dry spots remain. The dough will be thick.
  4. Fold in the shredded cheddar cheese until fully incorporated.
  5. Scoop the mixture into 1-inch portions with a cookie scoop or spoon, then roll into smooth balls.
  6. Arrange the sausage balls on the prepared baking sheets and chill for 10 minutes to help them keep their shape.
  7. Bake for 20–25 minutes, or until golden brown and firm to the touch. Allow to cool slightly before serving.

Notes

If the mixture feels dry, add a spoonful of cream cheese or a splash of milk. For extra heat, add red pepper flakes or use spice-forward cheese varieties. Freshly grated cheese melts more smoothly than pre-shredded.
