- Preheat the oven to 350°F (175°C) and line one or two baking sheets with parchment paper.
- In a large bowl or stand mixer, combine the ground beef sausage and softened cream cheese until smooth and evenly mixed.
- Add the Bisquick baking mix and continue mixing until no dry spots remain. The dough will be thick.
- Fold in the shredded cheddar cheese until fully incorporated.
- Scoop the mixture into 1-inch portions with a cookie scoop or spoon, then roll into smooth balls.
- Arrange the sausage balls on the prepared baking sheets and chill for 10 minutes to help them keep their shape.
- Bake for 20–25 minutes, or until golden brown and firm to the touch. Allow to cool slightly before serving.
Notes
If the mixture feels dry, add a spoonful of cream cheese or a splash of milk. For extra heat, add red pepper flakes or use spice-forward cheese varieties. Freshly grated cheese melts more smoothly than pre-shredded.
