Ingredients
  

For the Seasoned Potatoes
  • 800 g starchy potatoes peeled and cut into 2cm cubes (Russet, Sebago, or Maris Piper)
  • 1.5 tbsp olive oil
  • 0.5 tsp smoked paprika or regular paprika
  • 0.5 tsp dried thyme
  • 0.25 tsp onion powder
  • 0.25 tsp garlic powder
  • 0.5 tsp fine salt
For the Rest
  • 1 piece red bell pepper cut into 2.5cm squares
  • 1 piece red onion sliced into 1cm wedges
  • 1 tbsp olive oil
  • 100 g beef bacon chopped into bite-sized pieces (substitute for pork bacon)
  • 500 g chicken or turkey sausages good-quality, or preferred type
  • 4 pieces eggs or as many as fit in your tray
For Serving
  • 1 tbsp fresh parsley chopped, optional garnish
  • 4 slices toasted bread or warm pita for serving

Method
 

  1. Step 1: Preheat and Prep — Preheat oven to 200°C / 400°F (180°C fan). Line a large baking tray with parchment paper for easy cleanup and even roasting.
  2. Step 2: Season and Bake the Potatoes — Toss potato cubes with olive oil, paprika, thyme, garlic and onion powder, and salt. Spread evenly on the tray and bake for 15 minutes, until just beginning to crisp.
  3. Step 3: Add the Veggies — Toss bell pepper and onion with a little oil, salt, and pepper. Add to the tray and mix gently with the potatoes.
  4. Step 4: Add the Sausage and Bacon — Remove sausage casings and crumble meat over the tray. Scatter chopped beef bacon on top. Bake for 35 minutes, stirring once halfway for even browning.
  5. Step 5: Add the Eggs — Lower oven to 180°C / 350°F (160°C fan). Make small wells among the baked ingredients and crack in the eggs. Return to oven for 6–8 minutes, or until whites are set and yolks are to your liking.
  6. Step 6: Serve and Enjoy — Sprinkle with chopped parsley and serve hot with toast or warm pita. Each bite is crispy, smoky, and perfectly satisfying.

Notes

Use chicken or turkey sausages as a lean alternative to pork. Add vegetables like zucchini or cherry tomatoes for variety. To prepare ahead, roast potatoes and veggies the night before, then bake with sausage and eggs in the morning. Avoid overcrowding the tray for crisp potatoes, and freeze leftovers (without eggs) for up to 2 months.
