  • 2 medium Honeycrisp apples, cored and thinly sliced (⅛ inch) about 1¼ lb.
  • 1 lemon, zested adds brightness
  • 6 tbsp honey, divided 4 tbsp for apples, 2 tbsp for drizzling
  • 1 package (17.3 oz) frozen puff pastry, thawed but chilled
  • 1 large egg, beaten with 1 teaspoon water (egg wash)
  • 8 oz sharp cheddar cheese, grated
  • 1.5 tsp flaky sea salt, for finishing
For Topping
  • 0.25 cup chopped roasted pecans for crunch and nutty flavor
  • 1 tsp fresh thyme leaves for garnish and subtle herby flavor

Method
 

  1. Step 1: Prepare the Apples
    Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper. In a mixing bowl, toss apple slices with lemon zest and 4 tablespoons of honey until evenly coated. This helps the apples caramelize beautifully during baking.
  2. Step 2: Assemble the Pastry
    Unfold the thawed puff pastry and cut each sheet into four 4½-inch squares. Whisk the egg with water to make an egg wash. Brush edges lightly with the wash, then rotate each square to a diamond shape. Place 1 tablespoon of cheddar near the bottom corner, layer apple slices, and top with another tablespoon of cheese. Fold the sides over, press to seal, brush with egg wash, and sprinkle with sea salt.
  3. Step 3: Bake to Perfection
    Arrange the pastries on the prepared baking sheets (4 per tray). Bake for 20–25 minutes, rotating halfway through, until golden, puffed, and crisp. Cool for 5 minutes before moving to a serving platter.
  4. Step 4: Finish and Serve
    Drizzle the warm bundles with the remaining 2 tablespoons of honey, then sprinkle with roasted pecans and fresh thyme leaves. Serve immediately for the best flavor and texture.
