Ingredients

For the Potatoes
  • 2 medium russet potatoes (about 9–10 oz each), scrubbed clean and thoroughly dried
  • Olive oil for brushing or spritzing
  • Kosher salt for seasoning
  • Freshly ground black pepper to taste
For Serving (Optional)
  • Butter for serving
  • Sour cream or Greek yogurt for topping
  • Shredded cheese (such as cheddar) for topping
  • Chopped chives or scallions for garnish

Method

  1. Step 1: Preheat the Air Fryer
If your air fryer requires preheating, set it to 350°F (175°C). This helps ensure even cooking and crispier skin.
  2. Step 2: Clean and Prep the Potatoes
Scrub the potatoes thoroughly and dry completely with a towel. Prick each several times with a fork, then lightly coat with olive oil for even crisping.
  3. Step 3: Air-Fry to Perfection
Place the potatoes in the air fryer basket, leaving space for airflow. Cook for 25 minutes, flip, then continue for another 20–25 minutes until the skin is golden and a fork slides in easily.
  4. Step 4: Season and Serve
Transfer potatoes to a plate, slice open, and fluff the inside with a fork. Season with salt and pepper, then top with butter, sour cream, cheese, and chives. Serve immediately.

Notes

Russet potatoes are best for air-frying thanks to their starchy texture. Make sure to dry them well before cooking for maximum crispness. To enhance flavor, brush with a little extra oil halfway through cooking or season skins with garlic powder or smoked salt. For a vegan version, skip butter and use plant-based toppings like vegan sour cream or avocado.
